Tid-Bits

Hey guys! Happy New Year to everyone! We have been busy the past few days with family get togethers.
Saturday was a Christmas/Sean’s Uncle Birthday/ New Year/ Sean’s Grandma doing better party! We did not manage to stay awake until midnight but celebrated at 9pm since I was born in New York Yeah we cheated a little! .lol

Then yesterday we celebrated my Dad’s birthday with my parents. My Mom made spaghetti with her cook all damn day sauce (that I have yet to learn!) It’s filled with Italian sausage, and the best meatballs ever! I always bring my own pasta (2.5 ounces-Fiber Gourmet) to make up for the fact that I NEED to eat 2 of the meatballs. My mom doesn’t make them too big so I guess I don’t need to feel TOO guilty.

I brought ceviche with us both days and man does everyone gobble that up! Including us! YUM!
How to make ceviche
Red Pepper Sauce Ceviche
1/2 cup chopped onion
6 cups water
3/4 cup fresh lime juice, divided
1 pound medium shrimp
1 cup chopped peeled cucumber
1/2 cup Red Pepper Spread-Trader Joe’s
1/4 C ketchup
1/3 cup chopped fresh cilantro (I used parsley since I do not like cilantro)
2-3 dashes hot sauce (or as much as you want to use!)
Bring 6 cups water and 1/4 cup juice to a boil. Add shrimp; cook 3 minutes or until done. Drain and rinse with cold water; peel shrimp removing tails . I roughly chopped the shrimp I used because they were large and I wanted them to fit nicely on chips. Place the shrimp in the fridge to chill while you finish the recipe.
To make the sauce: Add remaining lemon juice and 1/2 a cup of the Red Pepper Sauce to a blender to smooth it out a bit. Add in the hot sauce and ketchup too.
Chop the onion & cucumber and place in a large bowl. Add in the chilled shrimp and blended sauce to the bowl; cover and chill until you are ready to serve. Tastes great with tortilla chips !

Sean and I made some pizza rolls last week too. We went old school and used the reduced fat crescent rolls for this one. I love when Weight Watcher math fools me, but in a good way!
1=3…2=6….and just when you think 3 will = 9 it tells ya 8! Smile Whoohooo!
I used about 1/2 ounce of low fat mozzarella in each roll and 3 slices of turkey pepperoni in each roll. Baked them according to the directions on the package. EASY DINNER! I had 3 rolls for 11 PointsPlus and had a tasty side salad to go with them. YUM!

Today Sean is off from work and the pool is closed so we are off to get our sneakers on to go bike riding! Then a little pre-birthday celebrations are going to take place…since Tuesday birthday’s are no fun! lol  Can’t wait to spend the day with Sean today! Off to unplug!
