When a craving strikes!

I was DYING for Mexican food today! I really wanted to drive down to the local taqueria. I could say, "No thank you" to the waitress as she starts to place the delicious bowl of chips & homemade salsa on the table in front of me. HAHA! Who am I trying to kid! I knew if I went there I'd end up consuming WAY too many PointsPlus! I knew I could beat the urge to dine out and I opened the pantry & fridge to help me out. 

Here is what I came up with!

1 point tostada shells....

 Spread with fat free refried vegetarian beans...
Topped with some sauteed bell peppers & onions....
 Mashed up avocado with diced tomatoes, lemon juice, & cayenne pepper....
 Got my sour cream baggie ready to make thin squiggles!

 Saucy!

All topped & ready to enjoy!

Success! All 3 of my tostadas came in at 8 PointsPlus & they were delicious!  :) So glad I skipped the restaurant!!

How do you tackle a craving? 

What foods do you try to re-create at home so you don't break the Pointsplus/ Calorie bank? 
I's say Mexican food is my #1 make at home meal. I love it!

Thoughts

Well I haven't felt very good the past few days and I have also been eating leftovers from dishes that Sean's Mom sent over for me. Not too much to share with you guys on the EATS side of the blog huh? I feel like a slacker! lol

But I did whip up a salad last night that I got the idea from a Weight Watcher handout from a meeting. :)

Salad-

Napa Cabbage-shredded
Carrots-shredded
green onions
garbanzo beans
orange segments
toasted sesame seeds

Dressing-

1/4 C rice vinegar
1 Teaspoon dark sesame oil
lime juice- 1 lime
3 TB water
fresh cracked pepper
It was very light & refreshing even Sean loved it! :)

I was all excited to make this salad so I could wash my cabbage with my NEW gift! :) I mentioned to Danica that I did not own a salad spinner and she hunted down a bargain for me! :) This thing is like the Rolls Royce of salad spinners! It has dividers for berries too!  It is HUGE and it worked great when I tested it out! Thanks Danica for a great find!
So I guess it wasn't that weird that I didn't have a salad spinner...lol but I started laughing as I went to brush my teeth this morning because I think I do have a few weird things going on in my life.

First up.... I keep a cup in my medicine cabinet. It is covered and each time we move (which had been a lot over the past few years!) I take off the wrapper, wash it and it comes with me. What is it for? Well it's just in case I barf and I am in the bathroom without water. lol Gross right? Yep...these are the CRAZY things I think of.

Ok so next is the gummy vitamins I take....hey at least I take something! :) I stink at swallowing pills. I swear they will get stick in my throat and I might need that cup above! lol 



So along with the WEIRD stuff....this is one of my favorite meals. Yes I am serious. :)

Cottage cheese
shredded carrots
garbanzo beans
dry roasted sunflower seeds
fresh cracked pepper

YUM!

Sometimes I get really CRAZY and add more to the bowl...

diced cucumbers
tomatoes
avocado
sweet potato

The possibilites are endless & oh so crazy! :)

Thoughts-
One of the things that has been frustrating me lately is the lack of weight loss going on over here. One week I am up the next week I am down...then back up! I feel a little STUCK.  I have pretty much maintained for a long time now. Which is honestly an accomplishment to me...I feel great! I also see a lot of changes in my body with my pool workouts 5X a week. :)

I think what is so frustrating is the fact that I am only 5-7 lbs from the HIGH end of the weight chart range that Weight Watchers recommends for my height.  ggrrrr

So what did the lady who works the scale say to me a couple of weeks ago? Get a doctors note.Then I wouldn't have to keep paying. Well as far as the fee goes I consider that money to be part of my monthly expenses. I enjoy going to meetings and I never give the cost a second thought!  :-/ She said maybe my body likes this weight. I have to agree with her, my body likes hovering around 160 it's the bouncing UP that I know I can control and need to focus on.

I think what I am going to do is just move on...keep going, keep trying. I know my tracking has been less than stellar lately and I know I have room to improve in that department. What I am NOT doing is giving up. Ya know why? Because I like what I see in the mirror and I want to get to know that happier person a whole lot more!

Family Fun

Hi everyone! I had such a fun day yesterday that I wanted to share it all with you guys! My Aunt Jody who lives in NY is here visiting my parents and yesterday I picked up her & my Mom and brought them over to my house. It’s the first time my Aunt has seen the NEW digs and I was excited to have her come over. Smile

 

After the tour we headed out for some shopping & eating FUN! We are really lucky how close we live to such great places around us! We jumped in the car and within 10 minutes we were up in Napa enjoying the beautiful sunshine as we shopped. I decided to take them to Napa General Store for lunch because Danica took me there and I couldn’t wait to go back! Smile

Do you remember me telling you about the fabulous recipe that was brought to the Fitbloggin local meet up by Sue? Well this was inspired by that dish with a little tip from Danica on how to make it a little different. If you CLICK HERE to view the original recipe you will see they use ketchup for the sauce…well I used…

Trader Joe’s Red Pepper Spread! That’s right (& why it looked so BRIGHT orange!) Smile  I decided to add it to the blender with the lemon juice the original recipe called for, with a dash of hot sauce and make a great swap for ketchup! Thanks Danica! Smile

 

Red Pepper Sauce Ceviche 

  • 1/2 cup chopped onion
  • 6 cups water
  • 3/4 cup fresh lime juice, divided
  • 1 pound medium shrimp
  • 1 cup chopped peeled cucumber
  • 1/2 cup Red Pepper Spread-Trader Joe’s
  • 1/3 cup chopped fresh cilantro (I used parsley since I do not like cilantro)
  • 2-3 dashes hot sauce (or as much as you want to use!)

Bring 6 cups water and 1/4 cup juice to a boil. Add shrimp; cook 3 minutes or until done. Drain and rinse with cold water; peel shrimp removing tails . I roughly chopped the shrimp I used because they were large and I wanted them to fit nicely on chips. Place the shrimp in the fridge to chill while you finish the recipe.

To make the sauce: Add remaining lemon juice and 1/2 a cup of the Red Pepper Sauce to a blender to smooth it out a bit. Add in the hot sauce too!

Chop the onion & cucumber and place in a large bowl. Add in the chilled shrimp and blended sauce to the bowl; cover and chill until you are ready to serve. Tastes great with tortilla chips ! Be prepared to make this again real soon! Smile

I think this might be my favorite pizza in the world….wait scratch that. I am a NY girl so I need to take that comment back! lol Smile BUT, this flavor combo is delicious! Again Danica gave me this idea and we used these in our Pizza Puffs that we made last week. You must try a pizza with Sweet Cherry peppers ASAP! WOW! The turkey pepperoni was a nice addition too….then Danica mentioned pineapple added to this and now I think I need to make it again soon, very soon!

Have you had grilled pizza before? WOW I think it makes it taste so much better!  I think I might ONLY make it out on the gill from now on! Seriously!! ya gotta try it! Everyone was loving it! So glad! Smile

 

All fun days must come to an end Sad smile boo hoo! It was such a fun time and before my Aunt leaves I am going to go visit my parents and say my goodbyes Sad smile I wish she lived closer!

 

Today was filled with laundry and trying out this NEW (to me) Windows Live Writer that Dainca spoke so highly about at her presentation at the fitbloggin local. This is my 2nd attempt at blogging using it. My thoughts….well considering I am a MAC girl and I have to use a PC to use this program I can not say I am a happy camper about that. lol For one reason this STUPID keyboard we have at the computer reminds me of an old fashioned typewriter and my fingers are actually cramping up typing on it. photo

 

Don’t the keys look too far apart on this thing? lol

I am also having picture issues. I tried to use the Picasa plug in but for some reason (mainly my not knowing how to REALLY use it) it didn’t work correctly. BUT in all fairness to WLW it does seem like a great way to publish a post….once I get the hang of it. Smile hehe

Pizza Puff Party!

Oh man Friday was a YUMMY day! So first off I am totally addicted to a little site called Pinterest. WOW I love all of the cool stuff on there! Lots of great ideas and load of yummy looking recipes too! I was browsing that site a couple of weeks ago and saw a picture of what appeared to be a pizza muffin. I had to click on the link to see what that was all about!

They were made in mini muffin pans and looked very tasty. Some of the ingredients were in need of some healthy modifications but I knew these were on the MUST TRY SOON list! I sent the link over to Danica with just one word: YUM 

I guess that is how our puff party got started! Before the PARTY I had to get my workout in at the pool. Can I just say how FABULOUS I feel in that water. I have been mixing up my exercise routine in there and I really think it is paying off. Even Danica told me she can see I am a lil smaller. See what a good friend she is! lol I’m gonna keep her! lol

I also made my way over to my Weight Watchers meeting today….down .8 whoohooo! I think that exercise is paying off after all! :) 

Ok so now on to the YUMMY stuff!

This is one of my favorite combos! Pineapple & pepperoni! YUM!
A lil dip in some sauce!

Ya gotta give these little bite sized treats a try! They would make a great appetizer for a get together or a fun dinner with the kids! :) 


INGREDIENTS
  • 3/4 cup whole wheat flour
  • 3/4 tsp baking powder
  • 1 Tbsp Italian seasoning
  • 1 tsp crushed  red pepper flakes
  • Dashes of sea salt & freshly ground black pepper
  • 3/4 cup 2 % milk
  • 1 egg, lightly beaten
  • 1 cup shredded part skim mozzarella cheese, 1/4 cup reserved for topping
  • 1/2 cup shredded whole milk mozzarella cheese
  • 1/4 cup grated Parmesan cheese
 TOPPING IDEAS-
  • 9 slices turkey pepperoni, chopped (1 points+)
  • Sun dried tomatoes, chopped
  • Pickled sweet cherry peppers, chopped
  • Pineapple tidbits
  • Olive Slices
  • Any veggies ~ cherry tomatoes, peppers, onions, mushrooms
  • Pizza Sauce for dipping
The possibilities are endless!
INSTRUCTIONS
1. Preheat the oven to 375 degrees. Grease a 24-cup mini-muffin pan. In a large bowl, whisk together the flour, baking powder, Italian seasoning, sea salt, pepper and red pepper flakes; whisk in the milk and egg.  Stir in the mozzarella and Parmesan, let stand for 10 minutes.
2. Stir the batter and divide among the mini-muffin cups. Mix and match your favorite toppings making sure to press them into the dough.
3.  Bake until puffed and golden, 20 to 25 minutes.
4. Meanwhile, microwave the pizza sauce until warmed through. Serve the puffs with the pizza sauce for dipping.
Makes 4 servings, 6 Pizza Puffs, 5 points+ each
