PRE-CINCO DE MAYO PARTY!

Ya see these tortillas? Ya know what that means? A PRE-CINCO DE MAYO PARTY! lol :) I was craving NACHOS so I invited Danica over to celebrate May 5th early with me!

I baked the chips... added stats for whatever PointsPlus value we felt like having...we both chose 24 chips for 4 points...well worth it for the yummy baked homemade chips.

BAKED CHIPS
-Cut up 4 tortillas into 24 triangles
-Spray with PAM & sprinkle with a lil salt
-Bake at 400 degrees for 6-7 minutes

 Ok...so some of you may know I like sour cream...and I like to add it to a baggie to make it go farther on my nachos. So here I am (stupid look on my face and all! lol) showing Danica my sour cream baggie! 2 tablespoons Fat free sour cream =0!!!

Ok so on my Nachos- 24 baked chips(4),3oz Lean Turkey w/taco seasoning(3), lettuce, green onions, tomatoes, black olives (1), green chiles(0), Mild taco bell sauce (0), corn salsa(1) for a  HUGE plate of 9 PointsPlus deliciousness! OLE!


 I used this yummy corn salsa from Trader Joe's! Anyone else like it?  YUM!

So you know the festivities didn't stop there right? :)

What goes well with NACHOS? Mini Donuts of course! LOL! 
 New appliance....good thing my kitchen is large! I love gadgets like this...and this one did not disappoint!

 all piped in and ready to close lid and wait 3 minutes...YES, ONLY 3 MINUTES!!

 ...and a lil cinnamon & sugar. YUM!

Brewed Some coffee to sip while we taste tested our donuts...how about some chocolate glazed donut coffee? 
 Our desserts awaited us....
 Danica's plate... identical to mine, except I devoured mine before picture time. lol
 caught mid chew... looks like I'm making a yuckie face, but let me tell you, these were delicious! I can't wait to make more of these! So many different ways to decorate them to make them pretty for any occasion!

I totally recommend that mini-donut maker! GO GET IT! So EASY! My only complaint is that it only makes 6 at a time..however the 3 minute time that it takes to cook them makes up for it! :)  

Oh yes, I did attend my weekly Weight Watchers meeting this morning. I was up 2.6 :-/ Remember last week's HUGE loss of 3.6? Well I really think my body was messed up. lol I never have BIG losses like that. I also know that in the span of 2 weeks I am still down a pound. I will take it. :)

I have a few thoughts on how I am doing lately and right now I seem to be in maintenance mode. I am thrilled that I am eating foods I love and staying on plan, however when you are 5 pounds away from the high range of the weight chart that Weight Watchers says is OK for you...ya gotta try to figure something out.

Right now, I'm thinking... More on this subject soon. :)

Thanks Danica for joining me today and for taking & sharing great pictures with me. I told her that I need to grab her camera once in a while to snap some shots of her eating! lol :) I get so excited & caught up in our visits I forget to take pictures! :) oopps!

Simple Craving

I rummaged through the fridge last week to come up with a lunch idea and this was born...

One tortilla (these are only 1 PointsPlus!)
One slice of light cheese...I had Havarti (2 PointsPlus)

 Added in an ounce of ham (1 PointsPlus) & a few slices of fresh ripe pear (0)

Folded it over and added it to a hot skillet sprayed with PAM. Browned both sides until the cheese melted.

 Then I dipped it in my favorite Hot & Sweet Mustard from Trader Joe's! YUM!  Loved the combo of flavors! Also loved the PointsPlus value of 4!

The mustard is 1/2 a PointsPlus for 1 teaspoon.

I need more ham ASAP! :) YUM!

2 Easter Celebrations

No Tracking as of yet! I am going to sit down after I blog and get busy with that! I am not going to throw in the towel like I have done so many holiday weekends before. I ate well, had some treats, now I need to track and hold myself accountable for the weekend. :)

Let me share what I ate...



Over at Sean's Parents the before dinner goodies-
Bean salad, yogurt w/ cucumbers & mint, veggie platter, cheese, crackers, & potato salad.
 I had about 2 Tablespoons of potato salad, a scoop of bean salad, some veggies, and 3 crackers. :)

Dinner- 1 cutlet w/ tomato slice, tadik, small scoop of cranberry rice ( I wanted the entire platter- go me!lol) and coocoo which is kind of like a giant frittata with spices in it. Everything was delicious! Also had salad that I forgot to snap a pic of.
Dessert platter that Danica helped me with. I had 1 lemon cookie & 1 Low fat banana bread cookie with tea.


Sunday we woke up and had breakfast sandwiches and then headed over to my parents for an early dinner. No real lunch just picking stuff. My Mom made this huge platter with berries. It was so good!

 Low fat cheese-cracker-veggie-hummus platter. I did really well not pigging out with this. Sad, but sometimes platters like this make me go crazy. :-/

Then it was time for our Easter Dinner.....or was it St. Patty's dinner? lol Yep, we did it again, corned beef & cabbage it was! We enjoyed this meal last year too! Since St. Patty's day was mid-week we all missed out on getting together for the traditional dinner so we all voted to have it for Easter. :) Worked for me! Here is my plate...

We had a great weekend with our families, but now I gotta get to tracking! It's back to business for me and my PointsPlus! :)

We have leftovers for tonight & tomorrow so no cooking for me for the next couple of days whoohoo!

Friday Fun & Weigh in WOW's!

Hello! Yesterday was weigh in day and then I had plans to meet Danica for lunch but then lunch turned into a baking afternoon then dinner! But we did really well eating out and tracking and encouraging each other to make healthy choices. :) That's what friends are for right?

So let's start with weigh in shall we.... DRUMROLL PLEASE!

I lost 3.6 this week! Say WHAT?  Yeah I was TRACKMASTER and had a fantastic week! whoohoo!

Ran over to meet Danica for lunch eerr... breakfast at The Joy Of Eating where we had previously gone to get amazing BLTA's. The breakfast was just as yummy!
I ordered egg whites, bacon & fruit (instead of potatoes- go me!) I ate 2.5 slices of bacon :) 10 PointsPlus for my meal :)
and 1 & 1/4 slices of this amazing bread that they make at the restaurant. YUM!

 I taught Danica how to make my bacon jam sandwiches. lol

Step 1. Add jam
 Step 2. Top with Bacon
 Step 3. Fold over bread and EAT! :) YUM!


Danica was a HUGE help to me yesterday by helping me bake goodies to take with me for the Easter dinner party Sean and I are going to at his parents house.

I helped...a little :) Nut roaster...
 First we made these Easy Rocky Road Squares
 I was the Chief Banana Masher :)
 Bananas were needed to make a double batch of Low-Fat Banana Bread Cookies!  The first batch we used JUMBO milk chocolate chips. The second was dried fruit mix & toasted walnuts. Both were so good I had a hard time deciding my favorite.
 I think Danica my be my baking hero. lol :)
Then just for good measure, oh and because I really wanted to try them we made her favorite 1Point + Lemon Meyer Cookies
 Oh wow these were DELICIOUS! For the record we split 2 Banana bread cookies, and one lemon cookie for testing purposes only. hehe :)

I was shocked to see it was after 5pm and we were both getting a little HUNGRY so off we went to Mary's Pizza Shack for......soup & salad!
Chicken nooddle & veggie soup. This was so home made tasting! YUM!

 I ate the small butt of the crusty bread that was delivered to our table and I was proud that we both had one piece and stopped at that! GO US! :)

This was my salad. I picked off the salame. :-/ I loved it! Mary's salads totally call for a little splurge of REAL full fat dressing. We both got some on the side & did the fork dip thing. Healthy habits rub off!!

The buddy system works because while we were at the table we busted out our phones, loaded up the Weight Watcher app and tracked it all! Whoohoo!

Do you have a buddy who helps you out along your journey? If you go to WW meetings try to chat with people, maybe see if there is a walking group in your area. I know at the meeting I attend a lot of the members live near each other and even walk to the meeting! Go out there and make friends for support along this journey! :)
