Hey guys! Thanks for all of the comments yesterday! I loved that you all chimed in and I am grateful that I am not alone in my struggles. I appreciate the supportive comments too! THANKS! I will let ya know how Friday’s weigh in goes as well as all of the new plan info that will be discussed.
Now on to the title of my post….
I’m not good at following directions. lol I also blame the fact that I woke up at 5 am and decided to start cooking before I started my 2nd cup of coffee! hehe
I made an old favorite Weight Watcher recipe- Spicy Black Bean Soup (click HERE for the recipe link) I love this soup! Not only do ya get a hearty 1 1/2 cups per serving but it’s only 4 PointsPlus per serving! WOW!
If you clicked on the recipe link already you might notice how you can see the chunkiness of the soup. Actually see the beans…. well mine…

Not so much! It looks like a chocolate pudding if ya ask me. But it tastes good! lol ![]()
What I did was forget that one of the cans of black beans DO NOT get added to the blender. Ooopps!
Oh well ya can’t always be a show off in the kitchen right? lol Do you ever have a kitchen blunder? Come on, share your boo-boo’s with me so I can feel better about my mistake. lo
Had another great day on plan yesterday! I ate 27 PointsPlus for the day using just one extra weekly. I feel great about the food choices I ate, and today I am all set to have a great day too! I made sure I made this soup to help me out so I can have EASY lunches for the rest of the week. I might head out to get an avocado to add in some toppings to the soup since it’s such a low PointsPlus meal!

My mother-in-law made meatloaf the other week and forgot to add eggs. It ended up being meatloaf crumble because it didn't stick at all. LOL. Weird. That is nasty to see tomatoes on top of chocolate pudding. ROFL.
ReplyDeleteJust about a month ago, I was in the mood to bake, so I decided to make blueberry muffins for my husband, and light pumpkin cranberry muffins for myself. For the blueberry, I looked up a recipe on my phone, from the Food Network, and I swear it said 2 T. of baking soda. Wrong! It was 2 t. of baking powder. The muffins that came out were so bitter and gross. They were very light and fluffy, though - LOL. Thankfully, I had also made my husband chocolate chip cookies, so he was only somewhat disappointed.

ReplyDeleteI think we've ALL done some kitchen blunders in our time. Once I was trying to impress a boyfriend (MANY years ago, long before I met my husband) and I'd made this swanky quiche...dropped it when I pulled it out of the oven. We sent out for pizza. And I made hummus for a dinner party once, left out the garlic. It was BAD hummus.
ReplyDeleteI once made pork chops for dinner...for sf guys..big guys. I made four porkchops..and they shrank. lololol. they ate at my house and then they ate after. I learned to cook bigger. Oh, and I once set a turkey on fire, but had so much fun laughing with a friend I don't consider it an error, but more a treasured memory.
