GARBANZO BEANS! WHAT??!! I have never seen them on the bush before!! WOW! Cool huh?!
I skipped the garbanzo bushes but I think I bought enough stuff to last a little while right? :)
For a special breakfast on Sunday morning Sean and I made waffles :)

Not too shabby..... this was 7 pointsplus for the entire waffle but I really didnt like the recipe I tried for the batter. Anyone have a good, low pointsplus, & tasty ideas? Send them my way!
No, this wasn't breakfast...it was DINNER! lol Sean was dying to crack an egg on one of the pizzas and I finally let him try it out. A buddy of his owns a pizza place that does this and he was just itching to test it out at home. I must admit it was tasty. :)
Now I gotta send you on over to Danica's Daily to see this next recipe. We cooked together last Friday and I am STILL drooling over what we made! YUM!
Baked Ricotta Gnocchi with 2 Cheeses & Walnuts! Yep, it's as good (or better) than it sounds!
If you have never made gnocchi at home I'm telling you...make this one! I've made several kinds and this ricotta version was delicious! I loved it!
I didnt like mine....can ya tell? hehe :)

Pumpkin Waffles:
ReplyDelete1.25 cups flour
1/4 cup white sugar
1 teaspoon ground cinnamon
1 teaspoon pumpkin pie spice (I usually don't have pumpkin pie spice so I use 1/2 tsp. cinnamon, 1/4 tsp. allspice, 1/4 tsp. ginger)
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
1 tablespoon baking powder
3/4 cup milk
2 tablespoons melted butter , cooled
1 egg
2 tablespoons vege. oil
1/2 cup pumpkin puree
1/4 cup unsweetened applesauce
1 tsp vanilla extract
1. Combine dry ingredients and mix well.
2. Mix wet ingredients in a separate bowl. Add dry ingredients to wet ingredients and mix until just combined.
3. Prepare waffle iron or pancake pan (you may need to thin batter for pancakes) and bake.

ReplyDeletefor chicken, make a cold salad with chopped chicken, taco or fajita seasoning, cucumber, quinoa, tomato etc. You get the idea.
Also, cucumber with yogurt sauce chopped with onion, chicken on a pita.

also on the waffles... use whole wheat flour... it's yummier and fills you up more.
ReplyDeleteI love the Panera's Chicken/Strawberry/Poppyseed Dressing Salad. It's easy to make at home, especially if your grocery carries Panera's Fat Free Poppyseed Dressing.

Sliced Chicken Breast
Romaine Lettuce, chopped
Sliced Strawberries
Pineapple Pieces
Blueberries
Pecans (or Almonds)
Toss all together with Poppyseed Dressing
Note: I don't have a recipe for FF Poppyseed Dressing but could probably tweak a recipe for it. Add anything you like... the possibilities are endless.
Easiest waffle ever, and loaded with protein:
ReplyDelete1/3 cup rolled oats
1/3 cup egg whites
1/3 cup fat-free cottage cheese
1 scoop of vanilla protein powder (I use Aria)
1/4 teaspoon baking powder
a shake or two of ground cinnamon
a dash of vanilla extract
Toss all ingredients in the blender and blend until everything combines into a batter. Pour into a preheated waffle iron that you've sprayed with cooking spray. Cook for about 8 - 10 minutes, depending on the temperament of your waffle iron. Makes one waffle of the circular variety.
Five PointsPlus for the whole waffle, and it keeps you full all morning! I love it topped with a dab of light whipped butter, a tablespoon of real maple syrup and fresh fruit. Adjust pointage to reflect your topping choices. It's my current favorite breakfast.

ReplyDeleteI had the best waffle in a fun coffee shop in Lake Tahoe. It was filled with pecans - in the batter and on top. I vow to re-create it in my light style but have not gotten to it yet. Soon. . .

1 can Condensed cream of chicken soup (98% fat free)
1 package ranch dressing mix
1 tsp minced garlic
1 cup fat free sour cream
16oz chicken breasts
8 oz multi grain pasta (rigatoni)
Combine first five ingredients. Place in slow cooker and pour sauce on top. Cook on high for 3.5 hrs. After time, shred chicken and mix with sauce. serve over hot noodles!

I like to use a mix I buy from Williams sonoma when I make waffles....it's pricy but good ( it's malted) I have no idea how many points+, haven't made them in a long time!
I once made an authentic Belgian waffle recipe sent by my neighbors exchange student from Belgium by her mom. It had yeast in it. It was pretty good...but called for tons of butter. I am certain NOT WW friendly! haha

I like to use cooked chicken breast to make pizza. I use Trader Joe's whole wheat mediterranean flat bread as the crust, add some doctored crushed tomatoes (garlic + Italian herbs) or store bought sauce, low-fat mozzarella, chicken (of course), pineapple (don't hate, it works here), mild pickled pepper rings, low-fat feta cheese. Heat in the toaster oven for single serve or the big oven if doing several.
ReplyDeleteAlso love to throw cooked chicken breast into wraps for easy take-along lunches. A Laughing cow wedge or other low-fat herbed cheesey spread plus sundried tomatoes and fresh basil are a some of my favorite wrap ingredients with grilled chicken. Easy peasey.
