I was DYING for Mexican food today! I really wanted to drive down to the local taqueria. I could say, "No thank you" to the waitress as she starts to place the delicious bowl of chips & homemade salsa on the table in front of me. HAHA! Who am I trying to kid! I knew if I went there I'd end up consuming WAY too many PointsPlus! I knew I could beat the urge to dine out and I opened the pantry & fridge to help me out.
Here is what I came up with!
1 point tostada shells....
Topped with some sauteed bell peppers & onions....
Mashed up avocado with diced tomatoes, lemon juice, & cayenne pepper....Got my sour cream baggie ready to make thin squiggles!
Saucy!
All topped & ready to enjoy!
Success! All 3 of my tostadas came in at 8 PointsPlus & they were delicious! :) So glad I skipped the restaurant!!
OLE! lol
How do you tackle a craving?
What foods do you try to re-create at home so you don't break the Pointsplus/ Calorie bank?
I's say Mexican food is my #1 make at home meal. I love it!
Enjoy!
Have a great evening everyone! :) BYE!
As an adoptive mom of two very special girls I know how important it is to find loving parents like Skott and Steve. I am sending them adoption vibes!
ReplyDeleteWhat a beautiful, sweet couple...i wish them the best in their adoption search. there are so many babies and children that need amazing people in their lives. i sure hope their dream comes true. and thank you for another great idea to eat. i love your blogs!!! thanks Tracey for always putting me back on the eating better road. i turn to your blog for help. your super AWESOME!!!
ReplyDeleteGAH, that would have totally cured my mexi cravings, too! I love Mexican food ALOT. I think it's especially the guac--obsessed with the stuff!
ReplyDeleteWow! Way to go on beating that craving.
ReplyDeleteCongrats to your brother and brother in law.
I could eat beans every day. Then again, the beans I make have bacon, onion, tomato, etc. in them... so that's less than diet friendly...
ReplyDeleteSo excited for your brother and brother in law! I can't wait for baby pictures!
What a cute couple! I hope the perfect child finds his or her way to them.
ReplyDeleteI try to recreate PIZZA, nachos, and fried foods! Tostados FTW! Those looked scrumptious!
ReplyDeleteI really enjoyed the video. I enjoyed it so much I am willing to let them adopt me. I may be a bit to old though. Good luck to Skott and Steve.
ReplyDeleteTracy, your love for your brother is so touching. I think it is awesome how supportive you are. And you make pretty good looking food too. What a package!!
ReplyDeleteLove the video! And Mexican, yep, I can have it every day and never get sick of it.
ReplyDeleteI think I'll put tostadas on the menu for me and my SIL next week - an easy way to load up on veggies too!
That looks better than you could get at any Mexican restaurant around here! (love the sour cream squiggles!!) Have a great day TJ!!!!
ReplyDeleteHi TJ...I was wondering where you buy your tostada shells...I live in So. California...I think you live in Northern california (I lived in Danville for 20 years up until 3 years ago when we moved to So. Calif.)...thanks so much!
ReplyDeleteJudy
Hi T.J. I was wondering where you purchase your tostada shells. I live in so. california now (moved from Danville 3 years ago) and I think you live in No. Calif. right? Thanks so much!
ReplyDeleteWhat a beautiful video!!! I have my fingers crossed they find a beautiful little girl or boy to adopt, they would make an amazing little family. I hope them the best!
ReplyDeleteMy best wishes go out to your brother and his husband. I'm a firm believer that everything happens for a reason and happens when it's meant to, so I'm sure that when the times is right they'll have the perfect little being to raise and to love. I'm sure they'll give their child a good home, and I hope for the best for them all. Oh, and I "liked" them on facebook ;-)
ReplyDeleteOh my gosh, what a wonderful video!! I hope they get the family they want. You can just see how much that child would be loved! :)
ReplyDeleteI make Mexican, Chinese and Indian food at home. It's just so much easier to have the ethnic food at home and keep control of the calories and portion sizes!
ReplyDeleteWhat is it about chips and salsa that totally invades the food trap in an insane way? I'm a magnet for that stuff. Sheesh.
