Easy Summer EATS!


Hey guys! This week mother nature really turned up the heat. Not my favorite time of the year! It also makes me look for little-to-no cook options! Thought I would share a few...let me know what you like to make to beat the heat! :)

Tuna. First of all I am so grateful to whomever invented the packs of no drain tuna. lol Makes my life easier! I am a tuna w/ mayo kinda girl, but I like my tuna on crackers not as a sandwich. Strange maybe, but it's my thing. lol :) A little light mayo goes a long way in those 2 point tuna pouches making this a great low pointsplus meal! Bulked it up with jicama & carrot sticks.


Ahhh who could forget the BLT! With or without the A :)  This one was from a night that I had a bad avocado :( So I dipped into the light mayo for a classic sandwich that I NEVER get tired of! I like to use Trader Joe's peppered turkey bacon at ONE pointsplus a slice! Good deal!

 Another EASY sandwich....basic fried egg on some fat free whole grain toast paired with some fresh fruit!
 Always love an egg salad too! Here I use 1 egg + 2 egg whites w/ 1 TB light mayo, & fresh cracked pepper to make this yummy open face style sandwich on a toasted honey wheat english muffin.
Salad is always a go to in the Summer months! Just last night I enjoyed this one! 
So easy...no real recipe...

Spinach & romaine- about 2 cups
green onion-diced
6 strawberries- sliced
1/3 C garbanzo beans
1 TB roasted pecans
drizzle of balsamic vinegar reduction- I heated balsamic vinegar on low, until it became thick & removed from heat to let cool.  
 Tonight was one of my favorite pasta dishes! SUPER EASY!
Get your pasta on the stove....I used 3 oz Fiber Gourmet Pasta. In your bowl & add grape or cherry tomatoes, cut in half. Fresh basil sliced thin,  fresh cracked pepper, & parmesan cheese.
When your pasta is ready drain & rinse under cold water. place in bowl, mix all of the ingredients together. EAT EAT!!! YUM! :)

  3. I also like my tuna on crackers versus bread. I need to try jicama sticks. They would go great with my carrots sticks. I never even thought of it and I love jicama. Thanks for the great snack idea. Gracie

  7. Oh It's so hot over here in the Valley!

    I love an BLT and corn on the cob when it's hot out.

    Chipotle Chicken Salad is also a big hit around here.

    Turkey wraps,mega salads with left over grilled chicken, pan fried tilapia with broccoli, turkey burgers with feta, home made hummus with veggies and flat bread. Most of the recipes are on my blog!

  12. I don't really have any recipes to contribute for these summer days but I LOVE the ideas you posted.

    One thing that you can always find in my house during the summer are WATERMELONS!
    We make simple watermelon Popsicles. I've seen many recipes that call for corn syrup but I have no idea why it needs it? All i do is crush some watermelon, add a little lime juice and sometimes we even add chili powder for an extra quick!

  14. Well I thank you very much for the ideas. I'm about to make myself a BLT right NOW! I've never tried egg salad. I am going to put that on next weeks menu. I'm with you as far as tuna goes, TEAM CRACKERS!

  15. Those are some yummy ideas. I made a similar salad yesterday with spinach, peaches, dried cranberries, pecans, feta cheese and a light vinaigrette. So refreshing! I want you to know I sure enjoy reading your blog.

  17. I love the fiber Gourmet pasta! Can have some pasta without a ton Oh guilt mixed in.
    I think we will do many more "sandwich" type dinners this summer - way too muggy already

  18. I simply grill outside - I've even put my wok on my grill (before the blog!) to make stir fry in the summer!
