Cooking & Packing


This is what our entire apartment looks like right now. I have been packing up boxes slowly, but man do we have a lot of stuff! lol 
 Even though I'm busy packing up I want to stay on plan as far as my eating. I am making EASY stuff, but I know from past moves that I can still eat well and move at the same time. Yesterday I made a NEW recipe up. Please excuse the fancy paper plates. :)


Mexican Quiche 
serves 4
(5 P+ w/o any toppings or sides)

3 Cups Egg Beaters
1 Cup corn
2 Ounces 2% mozzarella cheese (a Mexican blend would be good! I just used what I had at home)
1/4 cup green onions, diced
1 roasted & skinned red pepper, diced
2 roasted & skinned poblano peppers, diced
Salt & pepper to taste

*Topping for additional PointsPlus- sour cream, salsa, jalapenos, chopped fresh tomatoes, black or pinto beans.

Ok- I did roast the peppers myself, BUT you can buy a can of diced green chilies to save a step if you want to! :)

Spray 8X8 pyrex dish with PAM, mix all ingredients in a medium sized bowl; then add to pyrex dish. Bake for 35 minutes (or until eggs are cooked) at 400 degrees. Slice into 4 squares and serve with toppings of your choice. :) ENJOY!

I saw a bag of organic kiwis at Trader Joe's the other day and I had to have them. They were JUMBO sized and after a couple of days on the counter, soft enough for me to start eating. Dessert is served! YUM! Some fruits only I love, some only Sean. I am more of a tart fruit lover. Sean wouldn't touch these. lol His loss!


Do you like tart or sour fruits? Can I just tell you how excited I am for SUMMER FRUIT to come out! Especially on the new PointsPlus plan! WHOOHOOO! What ONE fruit are you looking forward to? Hard for me to pick just one, but I gotta say CHERRIES win hands down! :)

    Oh kiwi...I need to get some. Last year, I went through two huge containers of them from costco by myself! I like tart and sweet, but I can not stand mushy...eeeewww...

    I have been having extra pineapple! I just love it and now that is zero PPV's its an awesome treat! I also just had the pomegranate for the first time and loved it. I need to mix these two! YUMMY!!!

    Love Cherries and Mango - my first pregnancy cherries was the only thing I craved and luckily they were in season so I ate my way thru them!!

  7. Congratulations on the new home. I HATE packing up boxes and moving (that's why I don't do it very often). Because once you pack it all up you have to unpack it - and THAT takes forever and a day.

    I really love looking at your meals - the quiche looks great. I will have to try that one over a weekend.

  13. I tend to stick with sweeter fruits. Probably why I'm so sweet! haha, just kidding :)

    Our house is looking like that right now too! We move at the end of Feb. Happy moving to you!!! :)

  15. It would definitely be rainier cherries for me with honeycrisp apples coming in a close second. I don't really like sour fruit but I've been eating oranges lately since they are in season. I hope the packing and move go smoothly and you are able to stay on plan!

  16. How exciting TJ! Owning a home is such a major milestone, and good for you staying on track while you move. I bought some kiwi last week. I hadn't had kiwi in months,and it did something weird to the roof of my mouth, kinda like what pineapple do if I eat to much. On a random note, one of my coworkers has a student named Kiwi...random...i know.
