Bolani On The Brain!

Do you Bolani? Do you know what Bolani is? :) This Afghani flatbread is delicious! I must have walked past the stand at our local farmers Markets 100 times thinking-NO TREATS TRACEY! KEEP WALKING! Without stopping to see what all the fuss was about. This booth always has a crowd around it- always dishing out samples. Until fellow blogger pal Danica wrote about them I was set to add them to my NO list. Then I saw how low cal they were! WHOOHOO!


Last week I got the Spinach-



This week I tried the Pumpkin & the Lentil.






Look at those stats huh? All of those were taken directly off of the web site which can be seen HERE.

I have tried some of the sauces as samples at the formers markets but have yet to buy any. I guess I did not know exactly what to get. I will get some soon and let you know! :)

How do I eat these? I cut a slice off and stick it in my toaster oven- get them nice and crispy. For breakfast this morning I got creative with the lentil bolani-  added in 1/2 cup egg beaters, slice of diced ham, & 1 slice 2% american cheese. It was delicious!

Thanks for all of the hiccup tips yesterday! lol They lasted 45 minutes! I went to eat dinner and they went away. lol Figures food cured them! 

Gotta get ready for the pool now! :) Always makes me smile to get in there! 

4th of July is Sunday- who has plans? Anyone need to make a dish to bring to a BBQ? Whatcha making? :) Will there be fireworks? :) I need to make a dish- just not sure what yet!

Hiccups




Today at weigh in I was up .2 to 162lbs. Tracked so well this week too...gonna have another great tracking week and see what happens. Heres to a GREAT week! :) BLT's for dinner (5) with a WW featured recipe on the iPhone mobile app- Apple carrot salad. (2) YUM! Have a great evening everyone! :)

MONDAY BITES!

Hello! Boy is it HOT here....I hate temps around 100 degrees so I am doing my best to NOT go outside. I feel sick when I am over heated so the air conditioner is my BFF! :)

Yesterday for dinner we cooked outside so we did not need to add anymore HEAT in the house with the oven- Filet, grilled red onions, corn, harvest grain salad, cute lil potatoes from Trader Joe's! I had to get them-




Great tasty meal! Plus I saved some steak for my leftover madness salad today for lunch! YUM!


Some leftover harvest grain salad, shredded carrots, grilled corn, green onions, & my leftover diced up steak. DELICIOUS!

My MONDAY BITES recipe was making me drool all day! Crock pot cooking does that to me every time! My last trip to the library I came across this book-


I was excited to make something but I guess this is more of a comfort food book and not really that great for HOT days, but I enjoyed it anyway! I am feeling very lazy today and not in the mood for typing so I took a picture of the recipe for you. lol At least I stopped in this evening to post and share! :)

Served it over brown rice- the sauce was good, I added lots of fresh cracked pepper which kicked it up a notch and made it spicy. YUM! The stroganoff recipe serves 4 and is only 2 WW points a serving- my added 1 cup of brown rice made this a very filling 6 point meal. 


I was going to wait to share my POOL STATS for the entire month of June with you at the end of the month but I was so excited to show you all my numbers!! I will add in Wednesday to finish up the month but check out all of the calories I burnt! 
I am so amazed that doing something that I LOVE can actually be considered EXERCISE! :) whoohooo!

Full from dinner...about to go read blogs (man am I behind!) and then it's guilty pleasure night with watching the BACHELORETTE! lol I get so into that show and I laugh because it's not normally a show I would be into. lol SO weird!

LOOT!

Hi guys! Wanted to share my shopping LOOT with ya and say HI! Hope everyone is having a great weekend! Today is HOT here and I am wearing a TANK TOP! NSV for TJ! :) Yippeeee I also am having some Blogger issues so please hang in there with me. Not able to add any new peeps to my blog roll but I am working on it! Figures I have problems just as I want to update! lol

Wanna recipe? Here is a great salad idea to bring along to a BBQ or Summer get together! YUM! If you look under the recipe tab I have it listed made a little differently. You can add just about anything you like to this mix for a tasty dish! ENJOY!

Harvest Grain Salad

1 1/4 C dry Harvest Grain mix 
1 whole jar Trader Joe's marinated mushrooms- cut in 1/2
3 slices roasted red pepper, diced
1 small can sliced black olives
3 tablespoons capers-drained
1/4 cup Trader Joe's Balsamic vinaigrette dressing 
salt/pepper to taste

Cook harvest grain mix for 10 min (per directions)- put aside to let cool. 

Add everything to a big bowl and toss in dressing. Stir well- refrigerate & enjoy!

Happy Friday!


Happy Friday everyone! :) 
Starting off with the most important meal of the day! Breakfast was PB2 on a toasted sandwich thin with banana slices & a side of grapes.

Pool exercises went well and I stayed a little longer- I got busy chatting and the pool was not as crowded so I snuck in extra time! Shhhh :)   1hr 35 min. 402 calories burned. Came home hungry as always... saw Trina blog about Mexican food and so that of course is what I craved! I had the stuff in the fridge & pantry to whip these bad boys up! Black bean tostadas-
 YUM! Very tasty and filling 5 point lunch! 

OH!!! I forgot! I remembered to take pictures last night before dinner at Sean's Parents house! :) Are you all proud of me? hehe
Here is the main dish-chicken, eggplant, tomatoes, bell pepper-YUM!

Rice-

Tadik- (or I also saw it spelled tadig online, I gotta ask Sean!) This is my favorite- it is the bottom of the rice pot- a piece of lavash bread is placed down with oil so it gets crispy as it is cooked. SO GOOD!
Yummy salad-

Dinner was good! I have a container with leftovers for tonight! YUM! :)

Today I went to add another blog to my FOLLOW list  and I got a message telling me that I had hit my 300 limit and to follow anymore I need to delete some first! WHAT!!?? How dare they tell me how many blogs I can follow! lol SO I took the time to go through my list and started to feel bad at first, but then the more I went through them the more blogs I saw that people had either shut down or have not visited in months anyway!

Anyone have any FUN weekend plans?? Not too much going on over here. World Cup Soccer has interfered a little bit with plans lately. **Had to come back to share what I did with the leftover salad & chicken I took from dinner with Sean's parents- I made a BIG ASS SALAD- YUM! I added shredded carrots, tomatoes, grapes, 1/4 avacado, and topped with the dressing you see in the background from Trader Joe's. It was delicious! YUM! I LOVE LEFTOVERS!

Sneaking In Extra Fiber

Look at my cracker! What the hell is that? Straw? Hay? Ok, maybe those two are the same lol But seriously, what is that??!! I almost ate that! Guess some extra fiber never hurts right?

If you saw my email inbox you would think I need help. I have TONS of recipes in there that I have sent myself. I see a good one and I email it right over to myself. Some of them I end up making and this one I did not mark where I found it!! I hate not being able to give credit where I found it from but it is good so I wanted to share.

Red Lentils For 1


1/4 onion, diced
1 Tablespoon olive oil
cumin, paprika, cinnamon, hot red pepper
1/4 Cup red lentils, rinsed
1.5 Cups water (I used chicken stock)
Hot sauce to taste
Salt & Pepper

In a medium sauce pan heat oil over med-high heat. Add onion & cook until translucent-about 10 min. Add a dash of each cumin, paprika, cinnamon, & hot pepper (I used cayenne powder) Stir spices- add in lentils & water. (or stock) Cover and cook for about 20 minutes stirring occasionally. After about 20 minutes the lentils pretty much melt away leaving you with a soup like consistency. Topped mine with sliced avocado & tomatoes and served it with crackers. :)


I went over to the mall yesterday to see if anyone had deals on bathing suits. Mine are being abused at that pool I go to! lol One top is so stretched out and faded already. No way I want to spend a lot of money on them. I was shocked at the cost of some but today I went to Target- I might as well get the cheaper ones if they are going to get ruined by the strong chlorine 3-4X a week. Anyway I got 2 skirt bottoms & one top for LESS than the price of ONE SKIRT at Macy's! WOW! I love a deal!

When Sean gets home we are headed over to his parents for dinner. So no cooking for me. At least I shared my lunch recipe with ya! :) I hope everyone is having a great day today! BYE!

Wednesday

Hi Guys! I had a good workout at the pool this morning. Polar says 320 calories burt- can ya smell em? lol Came home & did a few chores around the house. So glad that at 7:30 am I threw together a meal in the crock pot! I am having a bad pain day- no real reason, gotta love it! Anyway....enough negative talk! I really do not like to constantly discuss my pain but sometimes my mood and behavior reflects how I feel. Just take it day by day. :)

Ok let's talk FOOD today...lemme show ya- Those cinnamon apple pitas that I got from Whole foods are SO good (so good I have away 1/2 the bag to my parents!) Hi, My name is Tracey and I have bread issues. lol Well at least I know my trigger foods. Last one that I had in my fridge was eaten this AM for breakfast- with a tablespoon of B & B yogurt butter. YUM! Side of fruit- one of Sean's figs! Shhh don't tell him!



Lunch was a BIG ASS Salad- I used cottage cheese as my dressing. 


Plus I had 4 more dolmas in the fridge. Dolmas are a mix of meat(these were turkey), rice & spices rolled in cabbage or grape leaves. Just so ya know MeSoHongry. :) 

Dinner which I have been drooling over all day was DELICIOUS! If you do not know my Mom makes the best Italian food- I do not eat it out anywhere but HER house! lol I myself cheat when I make it. lol I use low fat sausages, ground turkey, Fiber Gourmet pasta, low fat CANNED sauce. My meals are good, but nothing in comparison to my Mom's Italian cooking and I know that was passed down from my Nan, & her mother. My Mom learned from the BEST! Now, I do need to eventually learn...Ya hear that Ma? Maybe we can cook up a dinner together soon! :)

Ok! ok, I got off track... sorry! lol Dinner tonight was inspired by Tami's recent post for Melt in Your Mouth Italian Sausages. This smelled so good and I was not disappointed at all! YUM! Just changed a few things to fit what I had already in my pantry and got the Chicken Sicilian Sausages at Trader Joe's- very good! A little spicy, very tasty!  Go over to Tami's site for the full recipe! Such an easy meal!


About to take my book outside and sit on the deck for a little bit. Just started to cool off here and I want to get some fresh air. I finally picked up & started reading She's Come Undone by Wally Lamb that a few people recommended to me. I enjoy reading but sometimes it takes a bit for me to actually pick up the book and get into it. I think it's strange. lol

Deep Chocolate Vitatop for dessert later. Just saw a question on Facebook from them on how you prefer yours-

Weigh in day! :)

Been a few days since I last blogged! I got called for jury duty yesterday and had to sit there until about 3:45 pm before they figured out they did not want my help! lol Whew! Guess they did not like me! (thank GOD!) Came home and did not feel up to doing much of anything! Sean's Aunt sent over some dolma so it was perfect to have last night, since I did not feel like cooking.
Just added a side salad. Love this blue cheese dressing!


Today I woke up, ate a breakfast sandwich and went on over to my Weight Watchers meeting. Thrilled to see a 2 pound loss!!! I can not tell you how much I needed that! Well, I guess everyone understands, right? :) Had a great meeting, full of motivation, and off I went to the farmers market. Chicken pita sounded good- The pita was not very tasty so I ate this with a fork and picked at the pita a little. Estimated 7 points??
I also got a piece of corn....ate a few bites-

This was not so tasty. I wanted to bring it back! lol

Got some LOOT- Organic strawberries that look like they need to all be eaten tonight. Some of them are a little too ripe! I guess that is why they were only $6 for the 3 pack. Last time I paid $9. Some figs for Sean- he loves these! :) xoxo and some veggies I need to whip up a dinner for myself tonight. :) Oh and some spinach bolani that I saw Danica got at the farmers market a couple of times and I had to give it a try. YUM! It is delicious!


Packed my swim suit for the pool...so 1pm came and I jumped in! Had a great workout and just got home a little bit ago. I'm tired but I had to stop in to say HI. Just ate a snack- PB2 on an apple for 2 very tasty points.

Diced up some fresh zucchini, mushrooms, & onion, and chicken tonight for dinner. 

Cooked up a little quinoa w/ curry powder as well- threw it all together- YUM! I love dinners that I cook for just ME! :)
