I did enjoy having lunch out with my Mom over the weekend. We went to Panera Bakery and with their fantastic online nutritional calculator I was able to make my pick two lunch fit into my daily points budget! Love it! Here is the chicken tortilla soup w/ 1/2 of a asiago roast beef sandwich (no cheese) for 9 points.
Then for dinner my Mom and I made Baked Corn Flake Chicken. This is an easy recipe- we used chicken tenders. Dip them into light ranch dressing & then bread them with the crushed corn flakes. Place them on a cookie sheet lined with parchment paper. Spray the tops of the tenders with PAM & bake at 400 degrees for 15-18 minutes. Comes out crispy! We used Franks Hot Sauce as DIP Had a baked sweet potato & steamed broccoli as sides. :) YUM!
Tomorrow I have to get an injection in my spine. FUN! lol I had this same procedure done a year ago. It made me numb for about an hour and I was pain free- so I guess with that result they can tell if they can do other procedures that may or may not help me. Who knows! I am getting impatient and also worried because I am getting worse. I don't even want to think of what could be wrong or what might happen as this goes on. I just hope that with the amount of doctors I see and the specialist I BEG to be referred to can help me sooner or later. RANT OVER! Sorry :-/
I really hope everyone is doing well- I need to catch up on my blog reading and I really just wanted to say HI to everyone to let you know I am still here! :) I'm going to try to sneak over to my WW meeting to get my weigh in tomorrow- hopefully it will work out.

For one, I ADORE Panera's online calculator (Wendy's & Jack in the Box each has a similar one)! Takes all the guess work out of eating out!
ReplyDeleteI am SO sorry to hear about all of the pain you've been in. My mom had chronic pain in her back and neck, had to get spine injections and finally got neck surgery this summer. They took out a disk and replaced it with metal or plastic or something. She's doing much better now. I just hope & pray that you get to feeling better soon.

Back pain is the worst, I can't imagine the ordeal of chronic pain. I love that you have every reason to give up, to stress or emotional eat - to not exercise! But you stay strong!

Tj, sorry your back is giving you such a hard time friend. I had injections for a trigger finger and it helped a great deal.

I can empathize. I went thru years of non stop pain in my hands, wrists, arms and shoulders. My husband years with his back. His was broken tho. He had that spinal fusion surgery which made things a lot better for me. An other I met this past weekend just had that done too.

This might sound dumb ... but I love licorice. Licorice actually helps me when I'm hurting. Be careful not to overdo it if you try it. Trader Joe's sells Panda licorice which is yummy.
Hope that helps your poor back! Chronic pain just makes you miserable. Good thought going your way!
