Butternut Squash Flatbread (click link for recipe)
Had a lot of comments/questions about the Jicama "Hash Browns" :) I figured I'd answer some here-
Does the jicama ever get crispy on the outside like potatoes do?
--I used less oil, and mine sat at bit before I ate it- so I'm not sure, but they did seem like they might if I had left them for a while longer. :)
Does it taste like hashbrowns?
--I thought so! :)
What? No chicken?
--The eggs came from a chicken, I think. lol :)
What the heck is jicama?
--It is a root vegetable that can be eaten raw. I like to eat it with ranch dip. :) Here is a pic I found online-
Had weigh in yesterday. Up 1 pound... I knew it would be a gain. I always see it when I have my period. :-P
Yesterday at my Weight Watcher meeting they had an open house and they asked us to bring a one point treat. I totally spaced out and forgot to take pictures of my dish adn I also wanted to take pictures of what everyone else brought- but here is my recipe!
Ham & Cheese Mini Frittatas
Recipe makes 24
Points According to Weight Watcher’s Recipe Builder 2 for 1 Point, or .5 each
1 ½ Cup Egg Beaters (3.5pts.)
3 ounces Kraft 2% Cheddar cheese (7pts.)
8 Slices (one package) 99% Fat Free “Healthy Ham” -Trader Joe’s (3points)
1 Cup diced Onion (0)
2 Tablespoons fresh chives (0)
Fresh cracked pepper
PAM spray
Sauté onion in a non-stick pan, sprayed with PAM. Cook for 3-4 min or until soft. Set aside in medium sized bowl to let cool. Dice ham into small pieces; add to bowl with onion. Add in cheese; mix well. Spray mini tart/muffin pan with PAM. Place heaping teaspoon of onion, ham, & cheese mixture into pan. Pour in Egg Beaters; fill to top of mixture. Top with a little fresh cracked pepper, and fresh chives.
Bake at 400 degrees for 15 minutes, or until eggs are cooked through. ENJOY! J

They came out good- and everyone seemed to enjoy them. :)
Just took out a fresh batch of baked oatmeal (remember to go to the recipe tab to get this!) so I'm going to go eat breakfast! I have not been comfortable sitting at the computer for long so I am behind on reading blogs and feel bad. :( I hope all of you will forgive me!
Have a great day guys!
BYE! :)

Stupid TOM! I really hate seeing a gain when I know I've been following the plan. Your Ham & Cheese Mini Frittatas sound delicious. Can't wait to try making them!
ReplyDeletegoing to print these 2 recipes and put them in my book. TY
ReplyDeleteI keep wanting to try your baked oatmeal, but never think about having oatmeal in the morning because it doesn't tend to keep me full for very long. (I need protein in the mornings.) I'm thinking that my hubby and daughter would love these though!
ReplyDeleteDarn you TOM!!! Next week will be a loss for sure!
thanks for that! i'd been wondering about jicama for forever!
ReplyDeleteI am sure you will be down next week for your weigh in. That was pretty neat that you were allowed to bring in treats to your meeting.
ReplyDeleteSorry your back is hurting and I hope you get some relief soon.
I love Danica's jicama idea! I've tried jicama plain and wasn't a fan, but I think they would be great as a "hash brown". Gonna try it!
ReplyDeleteFeel better :( My back has been yucky lately, but I think of you and how you live with pain all the time and I shut my mopey self right up. I pray for you to be pain-free one day...soon :)
I will buy jicama at my next shopping trip!!
ReplyDeleteI had TOM last week for WI. Hate that!
Those frittatas sound good!
I always forget to buy jicama! I love it in stir fry's and in salads. Hash browns? I'll have to check that out.
ReplyDeleteThat squash bread looks GREAT!!
ReplyDeleteI wish I attended your WW meetings. :) I would love to try your recipes. Thanks for sharing! :)
ReplyDelete:P I am finally looking at the points part of your recipes now!
ReplyDeletePeriods suck goats arse *nods* you heard me.
*hugs*
m..mmm fritattas!
Next weigh-in will be great. You'll see! Vee at http://veegettinghealthy.blogspot.com
ReplyDeleteWe used to eat jicama when I was little. We always ate it raw, with lemon and salt and some chili powder. :o)
ReplyDeleteWould be a cool crunch factor to a salad as a topper.
wow love the recipe! Definitely going to try it!
ReplyDeletexo
Your flatbread looks delicious! It is great to be reading your blog again - I was so behind from my trip!
ReplyDeleteI have another spaghetti squash at home that I will try tonight. Hopefully, it will not be sour like the last one! :)
I LOVE that you answered the Jicama Hashbrown questions - maybe I should send everyone to this link :D
ReplyDeleteMine never got crispy either but I think adding the water "steamed" them then as it cooks off everything caramelizes. I imagine if you did not use the water and only used oil, then, they would get crispy - how can they not, that is essentially "frying" them :)
That's my story so I am sticking to it.
So jealous of your open house - wish my meeting would do something fun like that.
Great job on the Egg Muffins - they sound delicious :)
First of all I'd forgive you just about anything.
ReplyDeletePffffffffft at that damn scale. I get so frigging pissed when it's not good to you. I really do. Damn thing.
Those little quiches sounded good. I might have to try those.
Crap now I forgot what else I wanted to say. I'm sure it was important.....
Oh yes, I remember. I'm going to make a batch of baked oatmeal tomorrow as, insert gasp here, I'm finally getting back on program. Going to my meeting tomorrow I think.
ReplyDeleteOk Cutie~ Feel better. That's an order. If only it were that easy, right??
ReplyDeleteI was bragging about your blog at book club the other night. You have lots more people who love you now....lol.
Stupid one pound.....you'll get 'em next week!
Take it easy....hugs
