Crock Pot Cajun Red Beans

Hi! I made a great recipe yesterday that I gotta share with ya! I looked online for a red beans and rice recipe but I added and switched a couple of ingredients and this is what I came up with-


Cajun Crock Pot Red Beans

1 pound red kidney beans (dry- soaked overnight)
2 links smoked andouille sausage ( I used pre-cooked chicken sausage from TJ's)
1 medium onion-diced
1 medium bell pepper-chopped
1 large celery stalk-chopped
1 clove of garlic-crushed
1 bay leaf
1 teaspoon cayenne
1 teaspoon cumin
2 teaspoons salt
2 Tablespoons tomato paste
fresh chopped parsley

THE DAY BEFORE- Wash Beans, pick out any bad beans and or rocks. Soak beans over night.

In the morning- Add everything to the crock pot, stir well. Add enough water to cover bean mixture. Cover crock pot and set on LOW for 8-9 hours.

**Serve over hot rice (I used brown rice) 
**Add more cayenne if you want it HOTTER! :)

**I sliced the sausages in half lengthwise to get the flavor of them but did not eat them. You can slice them up if you want to add meat to the dish.

Once again I left out the points for this dish. I added the ingredients to the WW recipe builder and got 8 servings at 3 points each (without the rice) BUT I did not add the sausage to it. If you add in and eat the sausage the points need to be adjusted.

Stopped at the farmers market and made garlic okra fries to go with our beans & rice. They were good with the fresh crushed garlic added! 

Yesterday's post about activity points was very helpful for me. I loved hearing what you all thought. Thank you so much for your comments! I have always tracked online and I do not understand how to add in my AP's yet- never really looked. So I need to do that but I did add to my calendar what I burned and I think the 1 AP for every 100 calories seems like a decent amount. I looked up water jogging on the Weight Watchers site and it gives you 7 AP's! HOLY MOLEY! I looked up water aerobics and get 3. So I plan on adding in an extra 3-4 points depending on my time/calorie burn that day. I guess we will see what happens next Tuesday right? haha! 

Came home from the pool HUNGRY!  Toasted up 4 ounces of lentil Bolani & had a pluot too.   

Also had a salad w/ chopped up fresh spinach, shredded carrots, black olives & fresh corn that I cut off of the cob.

This is the yogurt blue cheese dressing that I love- So good! Look for it in the refrigerated section of the produce department at your local stores.


Just doing chores around the house now. I also need to go to the library to pick up a pain management book I put a request in for. The library we live by is very cool- I also love using the online features and requesting books to be sent over from other branches.  SO handy! :)

  1. jamaicans call that stew peas. we use coconut milk. my mother doesn't use beef, but little pieces of potato and carrots. so good!

    Instead I eat some crackers with butter...because I love them.
    lol.

  7. Sure wish we had a pool nearby. Closest thing is the little dip that fills up with water when it rains! I like to water-jog, but really, the closest pool is 45 minute drive.

  10. I actually have red beans and rice on my list of things to make - love that its done in the crock pot!

    Sadly, my library is small, but used to be a "lending" library which meant while I would have to wait longer, I could basically get any book I wanted.

    Well, they lost their financing for transporation between libraries, so my selection isn't as big anymore :(

  15. Tracking your AP on line is easy peasy
    On your plan manager there is a tab for activity tracker - click on it to open and you can enter your activity like you do your food.
