ICE BOX CAKE!

Yesterday I decided to make a cake that my Nan & I made together a few times. BUT, I was going to make it the healthy way. :) The real way includes home made whipped cream & chocolate wafer cookies. I decided to take these ingredients and try to make it, and have it taste just as good!







2 containers light cool whip
2 boxes (I used one box +2 bags-so 8 bags total) 100 Calorie packs Oreo wafer cookies
5 bananas

I used an 8X8 pan- and I know I could have used another layer on my "cake" but I ran out of banana's and cool whip! lol All you do if place a thin layer of cool whip on the bottom and sides of the pan-
Then place the cookie wafters- top with more cool whip & a layer of bananas-


keep layering...



Then on the top make a thicker layer of cool whip and crush a few of the cookie wafers to sprinkle on top. :)


Cover & place in freezer over night or 5-6 hours. Remove from freezer and let stand about an hour before serving. The cool whip makes the cookies soggy and soft and tastes so good! Even though I made it the healthier way I think my Nan would be proud of me. :) Everyone loved it too! :)

I did not add this recipe to the Weight Watcher recipe builder yet! I need too! I estimated my portion last night to be 3 points but I will add it eventually.   Ok Ok so I went and added it and that 3 point portion that I GUESSED on was more like 5. lol SO if you make this as instructed- in an 8x8 dish and divide it by 12 it is 4 points each. If you want larger portions 8=6pts. All in all I bet it is a healthier version than the original one using home made whipped cream right? lol :) Oh well a lil dessert once in a while will not kill us right? :)

Dinner last night was delicious! kabob, grilled chicken, tadik, grilled veggies, corn, & salad. 







Breakfast this AM- Fage 0% w/ a lil honey & a small banana smashed into the cup. lol 



Went to the pool did 1 hour 19 min and burned 424 calories! Whoohoooo! I love seeing the number over 400!! Ever since I added the weights to my ankles  I get a better burn result. I needed to work my body up to that point though. My back is a little sore today, but I'm going to do some stretches to make sure I don't stiffen up later. 

Lunch looked like a HOW MANY VEGGIES CAN I GET IN MEAL HAHA! Let's see- cucumber, carrots, tomatoes, jicama, and spinach if you count it on the sandwich! lol I used some of the leftover ranch that I made with the greek yogurt to dip my veggies in. It was delicious and I enjoyed the turkey sandwich on the bagel thin too! :) 



Just me tonight for dinner and I have a container of leftover goodies from last night at Sean's parents that I am looking forward to enjoying! :)

TGIF! Hope everyone has a great Friday! Anyone have FUN plans for the weekend?? We might try to get out of here on Sunday- just to do something different than or usual shopping chores. Hummm but then I am left to do it on my own on Monday :( boo! lol Naw, It will be ok!

  4. That cake looks really good TJ. I was going to run it through the recipe builder but didn't know if it was 8oz or 12oz containers of Cool Whip.

    Den and I both have Sunday off too and if it's nice we'll do something too. We want to take a trip through the wine country here....just waiting for a lovely day to do that. Stock up on our MI wines that we can't get in FL.

  8. Your blog just inspires me so much, TJ. I love the way you just keep pressing on and incorporating your WW plan into all aspects of your days.

    The cake looks like a lean version of one I used to make with cool whip, pudding, bananas and crushed up (I think) vanilla wafers. Oh, and cream cheese mixed in with some component...it was called "Better Than Sex", tee hee.
