If you saw my email inbox you would think I need help. I have TONS of recipes in there that I have sent myself. I see a good one and I email it right over to myself. Some of them I end up making and this one I did not mark where I found it!! I hate not being able to give credit where I found it from but it is good so I wanted to share.
Red Lentils For 1
1/4 onion, diced
1 Tablespoon olive oil
cumin, paprika, cinnamon, hot red pepper
1/4 Cup red lentils, rinsed
1.5 Cups water (I used chicken stock)
Hot sauce to taste
Salt & Pepper
In a medium sauce pan heat oil over med-high heat. Add onion & cook until translucent-about 10 min. Add a dash of each cumin, paprika, cinnamon, & hot pepper (I used cayenne powder) Stir spices- add in lentils & water. (or stock) Cover and cook for about 20 minutes stirring occasionally. After about 20 minutes the lentils pretty much melt away leaving you with a soup like consistency. Topped mine with sliced avocado & tomatoes and served it with crackers. :)
I went over to the mall yesterday to see if anyone had deals on bathing suits. Mine are being abused at that pool I go to! lol One top is so stretched out and faded already. No way I want to spend a lot of money on them. I was shocked at the cost of some but today I went to Target- I might as well get the cheaper ones if they are going to get ruined by the strong chlorine 3-4X a week. Anyway I got 2 skirt bottoms & one top for LESS than the price of ONE SKIRT at Macy's! WOW! I love a deal!
When Sean gets home we are headed over to his parents for dinner. So no cooking for me. At least I shared my lunch recipe with ya! :) I hope everyone is having a great day today! BYE!
I've always had good luck with bathing suits at Target! TJ Max and Marshalls also have good prices on them, brands you would find at a place like Macys for much less! I splurged on a Juicy Couture bathing suit last year when I got so close to goal (it still fits so I am wearing it this year too!) but otherwise I stick to the other places I mentioned...oh and Victoria's Secret for bikinis!

ReplyDeleteMy favorite 2 swimsuits came from Target. Better than anything I've seen anywhere else when you factor in price. Glad you got the goods!
Good gravy, girl! Maybe that is part of a corn husk??? Probably a better idea that you didn't eat it. Might be bothersome coming out if you know what I mean! ;)

We don't have a Target up here, but Walmart sometimes has some good picks for cheap, you just gotta dig.

ReplyDeleteOK, now you're cookin! hehe That soup looks fabulous. I'm a soup a holic. I will make that for sure. I shall float homemade croutons in it. I shall make them from whole wheat sandwich thins, 1 teaspoon of olive oil, and garlic. Yum.
ReplyDeleteI get all my bathing suits in FL at the end of summer....crazy deals. Sears had them for under $6 each last year! I'm talking about $80 suits!!! I'm sure they do the same here at the end of summer. Keep your eyes open and stock up!
PS: I just copied the recipe and mailed it to myself! I do that all the time too!
