Butternut Squash Flatbread

Hello! Last night's dinner was good! I mentioned in yesterday's post what I was making and of course that I was changing it up. When I change a recipe I switch things that I do not like about it. If you don't care for a spice- SKIP IT! CHANGE IT! Add what YOU like. I also wanted to make it a lil more healthy.

The original Butternut Squash Flatbread recipe which was in the MARCH 2010 REAL SIMPLE Magazine made me drool from the minute I saw it. However full fat cheese and white dough were used. So I pulled my switcher-roo! I always sit down at my computer to change a recipe. Using the Weight Watcher's recipe builder to get my points. In the original Real Simple recipe (The NI are located in the BACK of the magazine-not sure why they just don't post them on the same page!!?? What's the big secret?) stats were CAL 640/ FAT 30/ FIBER 6 (serves 4) In WW terms that is equal to 15 points PER serving. Ummm that is a little high when my daily points allowance is 22. lol So that is why I try to make things better for me! I don't want to miss out on a yummy recipes just because they call for higher calorie/fat items.

Here is my recipe...and YES, I loved it! Sean loved it, and we will definitely be making this again! Plus we have leftovers for another meal this week! :)

Butternut Squash Flatbread
(serves 4) 8 WW Points

1 Pound store bought wheat pizza dough
2 cups cubed, slightly cooked butter nut squash-cut into thin slices
4 ounces reduced fat mozzarella cheese
1/2 cup red onion, sliced thin
3 teaspoons olive oil
3 cloves garlic, diced
pepper
parmesan cheese (I skip salt and add a sprinkle of cheese instead)
corn meal-to dust baking sheet

Heat oven to 450 degrees. Roll out dough- may need a little extra flour to prevent dough from sticking. Place a small amount of corn meal on baking sheet to prevent dough from sticking- plus it gives it a lil crunch. Place dough on baking sheet- brush oil over the entire sheet of dough. Cover dough with cheese, butternut squash, red onion, sprinkle with parmesan cheese & pepper. Add diced garlic. Bake for about 25-30 minutes or until golden brown. ENJOY! :)

Today I am feeling good. Hoping to be able to go to the pool again! I've missed it! My back has missed it too! I really feel the difference with my movement when I am exercising the back. Laying down sick the past few days tightened everything up. Just goes to show you if you are in pain with arthritis- it is better to MOVE! Uh oh, makes me wanna sing " I like to move it, move it- MOVE IT!" lol

Another new recipe tonight! Crossin my fingers...it involves tofu. lol

  4. Talk about an unusual dish! It contains lots of things I like and I bet it is flavorful.

    You are so good at changes up recipes to make them healthier and point friendly.

  11. FABULOUS switcher-a-roo! I am going to attempt this "maybe" when I attempt to make my own crust. I want to use the No Rise Pizza Dough recipe for it. It looks and sounds sooooooooo good!

    I "almost" got excited for the NEW recipe tonight until I saw that BAD 4-letter word ~ tofu ;)

    I "hear" though that I am supposed to find the right way to eat it then I'll like it - ummmmm
