Soups On!

Did anyone I SPY the rotisserie chicken that I picked up from Costco yesterday? Well when we got home I pulled the breast meat off (sad, but that is the only meat I like- I tossed the rest. I know it is a waste of food- but for $5 it is a good deal for the amount of meat that comes off of that chicken for me. Not to mention how easy it is. Ok, so anyway...I pulled all the meat off and shredded it up to throw in the soup I made to eat for lunches this week. :) Here is what I made:



Chicken Tortilla Soup
1 1/2 C= 4 points PLUS points for chips

5 Cups Low sodium chicken broth
16 ounces cooked shredded chicken- white meat only
1 small onion, chopped
3 cloves of garlic, crushed
1 15 ounce can black beans, rinsed & drained
1 11 ounce can corn, drained
1 14.5 ounce can diced tomatoes
1 small can diced green chiles -I forget the ounces! ooppss it's the small ones
1/2 teaspoon cumin
1/2 teaspoon cayenne (I also sprinkle more in my bowl- for an extra kick)
Juice of 1 lime
Salt
*OPTIONAL- fresh cilantro (not for me-yuck!) lol
*Mission EXTRA THIN corn tortillas (I use these because they are 2 for 1 WW point)

In a medium pot spray with PAM- add onion & garlic. Cook until onion is slightly translucent. Add in cumin & cayenne-stir for a couple of minutes. Add in all remaining ingredients (except cilantro- you can toss that in your bowl as you serve it, and do not add the tortillas)

Cover and bring to a boil, simmer for a few minutes to blend the flavor. All ingredients are cooked, so this is a FAST recipe. Meanwhile cut your tortillas into triangles or strips. Place on a baking sheet and spray with PAM & season with salt if desired. Bake at 400 degrees for just about 8 minutes or until golden brown. Watch them- because each oven varies. Serve your bowl of soup with the chips in it or on the side. You may also like shredded cheese as a topping too. :) ENJOY!

This was a GREAT lunch for this week of rain that we are having. I was FULL with the 1 1/2 Cups and my 1 point worth of chips. YUM! I also loved the protein...crazy but I crave it sometimes. :) Oh by the way Sean said the chicken STUNK yesterday at Costco, in the car on the way home, AND when I started to take the meat off. Complain, complain! I told him I would not make him eat it. lol He is missing out, the soup is fantastic! Shhh don't tell him. :)

Had to go to the mall today to exchange a couple of things. I decided to walk around a bit. I looked up and saw my old favorite. Aunt Annie's Pretzels. I stopped to take a picture for you. lol Ya know back in the day I would not hesitate to get a butter soaked pretzel. Now I sometimes hold my breath as I walk by. Good bye Aunt Annie's, It was fun, but you stick to my butt...see ya! :)

Ok...making some baked oatmeal. I like my simple recipe:
2 C rolled oats
2 C unsweetened almond milk
1 teaspoon pure vanilla extract

Add all to a bowl- stir, then add mixture to a 8x8 PAM sprayed pyrex dish. Bake for 45 minutes at 400 degrees. I plan on topping it with that jam I picked up at Costco. Can't wait for breakfast tomorrow! :)

I've said it before, but the possibilities are endless with this recipe. You can add cinnamon, dried fruit, nuts, whatever kinda milk you prefer. I just keep it simple and low in points to top it with whatever I am craving. Sliced bananas are good, I also have a lot of strawberries right now. Lots of ideas!


Hope everyone had a GREAT Monday! I loved my pool workout today. I am pretty sore and super tired. I tend to stiffen up if I don't move after that is why I walked around the mall. I also need to do some stretches soon. Tomorrow is my Weight Watcher meeting/ Weigh in!   1. YUM! That soup looks delish. I really only likfe the white meat, but I can't make myself throw away the rest.

    I may try that cooked oatmeal. Maybe I will like that. I don't like regular oatmeal.

  2. Your soup looks great! I've never had tortilla soup but it's a favorite of one of my very close friends. Might have to give it a try.

    I love rotisserie chicken at Sams Club too! They're the best, especially when I've got a busy day of work and don't want to have to bother too much in the kitchen. I like all the chicken though, but the breast is sooooooo good. I also use the leftovers to make broth and then freeze it.

    Haven't had oatmeal in a while. I have some steel cut oats left in the cabinet. Would that work?

  4. I keep making that chicken enchilada soup. I'm making it again tonight. Mmmm. Reminds me that I bought no chips for it. Oh well. We will do without.

  5. Those chickens are great! We don't like the dark meat either, but I do save it for casseroles or soups. I have a good recipe that tastes just like Aunt Annie's pretzels on my blog. I bet you would like it!

  6. TJ, first, I really like the new layout of your blog, especially the font of the text. Very easy to read. I love fonts... I know that's weird. Second, never feel bad about buying roasted chicken from Costco. When Daniel was on the road, I would buy a chicken and it would last me the whole week. So many things you can do with a roasted chicken. Now that he works in town, I roast two at a time. One for him and one for me.

    Also, your tortilla soup looks really good. I'm gonna have to try it soon. Also is that an oatmeal breakfast cookie? I want to try it right away. I just bought raisins, oatmeal and almond milk so I'm gonna try it tomorrow.

    I may not make it to our meet up on the 17th. Students are having an end of year event which I need to help plan. Geez, they don't give me much time, do they?

  12. I've never eaten a n aunt annie pretzel..I did have a cinnabon cinnamon roll though. Glad I didn't have a CLUE how many calories they were when I got that...lol.

  16. HA! :) I do the exact same thing when I buy a chicken at Costco. It drives my mom crazy! The soup looks yummy!

  18. I made the baked oatmeal and added honey and dried cranberries. Next time, I'm going to try adding nuts and maybe a different dried fruit. I love it. It's handy to have on mornings when I don't have time to make breakfast.

  20. OMG, Auntie Anne's pretzels!! When I worked downtown in Chicago, I bought one for the ride home FIVE DAYS A WEEK!

    The soup looks terrific - of course I'd spike mine with Tabasco!

  21. I don't go to the mall that much but I think we have one of those pretzel places. I love soft pretzels!!!! LOVE THEM!!! They sell them everywhere now: Target, Wal-Mart, the movie theater...everywhere!! Temptation is all around us. Anyway enough of my pretzel location report.

    Your soup looks delish! Which one do you like better, the one with the pumpkin or this one?

    I always forget about the TWIET Tuesday. Sometimes I gobble my food up forgetting to take a picture!
