EASY, YUMMY, HEALTHY Dinner! :)

Ok so I could not wait to share dinner with you! I just finished eating and Sean's plate (he is not home yet) is looking kinda tempting! lol Remember I showed you these Aidell's chicken meatballs? On the back of the box they show you serving suggestions- we usually add them to skewers and throw them on the grill with some veggies. This is a great idea! But for tonight I added them to a fry pan to heat up- and made lettuce wraps with them! Here is my plate- I only ate 3 meatballs (3 points) I cut them in half. In the lettuce: shredded carrots, bean sprouts, green onion, and sweet & spicy chili sauce. YUM!

The chow mein was a last minute find at Safeway. I ran in the produce section and saw them in with the vegetarian stuff. Here is the package- I added red bell pepper, red onion, & pineapple. 1/2 of the package is 4 points without any added goodies.

We use to get those chicken meatballs all the time but I got sick of them. lol This was a great way to enjoy them again! They have them at our local stores and Costco carries them as well. :)

Ok...that is all from me! I just didn't want to wait till tomorrow to share! lol

  8. I had turkey meatballs not too long ago...tasty.
    I like the look of those chicken meatballs. I think I'll give those a go.

  9. I have to get me some of those meatballs and the stir fry noodles would be great for my quick and easy nights.

  13. I LOVE those Yakisoba Noodles too and just whipped up a healthy chow mein this weekend with them. I LOVE your dinner - looks so good. I NEED to try it. I LOVE those meatballs but never buy them because it doesn't seem like much for 3 points. But, I like how you cut them in half - good idea!

    Can't wait to hear what you think of the restaraunt. P.S. We also have another attendee :D

    I read the descriptions of your meals and used my imagination. This piece of crap computer is fickle. Some days I can see pics and some days nothing!

  16. That looks great. Mmmm. I haven't tried those stir fry noodles yet. I think I've seen them at our Safeway ... probably.

    I tried Lyn's [escape from obesity] cauliflower pizza last night. Bet those meatballs would be the bomb on that. It was really good. :) And easy. I used parchment to line my pans instead of oil. Things don't stick to parchment, so it saves you some calories. Bonus that the pans are then a snap to clean up.
