Yummy SOUP! :)


Ok, I cooked it! This soup is DELICIOUS! I love it! I baked some tortillas strips(using the Mission brand 2 for 1 WW point THIN corn tortillas-cut and sprayed with PAM) to top my soup and skipped the cheese and hot sauce. I find the green enchilada sauce spicy enough. :)

Ingredients:
3 cups fat-free chicken broth
1 1/4 cups finely chopped celery
1/2 cup diced sweet yellow onion
3 cups green enchilada sauce
One 15-oz. can pure pumpkin
10 oz. cooked boneless skinless lean chicken breast, chopped or shredded
1 cup frozen white (or yellow) corn
Optional: dash hot sauce, or more to taste
Optional toppings: shredded fat-free cheddar cheese, crushed baked tortilla chips

Directions:
In a large pot, bring broth to a low boil on the stove. Add celery and onion, and simmer for about 5 minutes, until slightly tender.

Stir in enchilada sauce and pumpkin. Once soup returns to a low boil, add chicken and corn, and mix well. Cook for an additional 3 - 5 minutes, until soup is heated throughout.

Add a dash or more hot sauce. (Or not. It's your soup.) Serve and, if you like, top with shredded cheese and/or crushed chips.

I just finished lunch and a few loads of laundry. I am going to bust out the Wii Fit in a second and play a couple of games and do some of my physical therapy home exercises. I am NOT enjoying all of the rain we have been having for OH, the past FEW weeks! I feel like the next time I see the sunshine I am going to RUN outside and never come home! lol Seriously, it's been awhile here! I was so excited about lunch that I really did not think about what I am making for dinner! lol Probably something easy! If you saw my shopping loot I really only picked up FRESH stuff- I tried to shop at home first and see what my pantry had for me to work with. Maybe a pasta dish tonight...we shall see!

Oh! Vitalicious is having a sale for Valentines day. So I treated myself to it! lol I love the muffin tops and I just finished my chocolate ones (I had some brownies) from my last order. DEALS HERE!

    It rained all weekend here and now that it is work it was not - cold but ay least not wet too.

    Shopping at home is best :)

  11. That soup looks good. I am trying variations on lentil soups and black bean soups.
    I am excited about trying new recipes. That one looks good, it is something to keep in mind.

  12. Why do I not know what green enchilada sauce is?? And three cups of it?? Not very often I am stumped by an ingredient. Maybe another of your Canadian readers can tell me where I could buy that here.

  15. I FINALLY just made this soup tonight! It is fantastic! My supermarket had boneless, skinless chicken breast on sale yesterday so I put it all in the crockpot this morning and shredded it for the soup when I got home. Plus this recipe makes 9 servings,so I froze half to have another night. YUMMY!!
