Holy Tofu Deliciousness!

Dinner was SO yummy I had to post to show you all and share the recipe-

Baked Tofu

1 pack (double pack) Extra Firm tofu (not Silken brand-I hear that does not work well)
1 inch piece of ginger-grated
1/2 cup low sodium soy sauce
3 tablespoons rice vinegar
a few splashes HOT chili oil

This recipe requires a few steps- but if I can be patient enough to do it, anyone can! lol Cut Tofu cubes into 1/4 inch pieces. Lay them down on top of a plate with a few layers of paper towels. COver with more paper towels and another plate-with a heavy item on top to press out any excess water. Set timer for 30 min.

In the meantime while the tofu is being pressed- Grate ginger and add it to a pyrex dish, along with the soy sauce, vinegar, and chili oil. Place pressed tofu into pyrex dish with marinade 20 minutes on each side.

Line a baking sheet with parchment paper and place marinated tofu down- bake at 350 degrees for 25 minutes on each side. :) Yeah its a little time consuming , but so worth it! :)

I served it with my Fake Fried Rice-

TJ's Fake "Fried" Rice

2 cups cooked brown rice
1/2 cup egg beaters
green onion-diced
1 1/2 cups frozen mixed veggies-defrosted
splash (or two) of soy sauce
1 clove of garlic-pressed
2 teaspoons olive oil
splash (or two) rice vinegar
1 tablespoon fresh grated ginger

In a large skillet or wok add oil, garlic-toss in rice and stir to mix & coat rice with oil/garlic. Add veggies and cook until heated through. Make a hole in middle of pan; add egg beaters and scramble until cooked. Stir entire pan, mixing egg into rice. Add soy sauce, rice vinegar, ginger, and green onion-mix well-eat-enjoy! :)

I cut my 4 ounces of tofu up into strips and sprinkled a little crushed cashew on top of my rice. It was delicious! Side of steamed green beans to go along with it! YUM!

Dessert for tonight was delivered today! Lots of chocolate goodness! YUM! If you happen to try this tofu recipe let me know! I'd love to hear how you like it! This is by far the BEST way I have ever cooked tofu at home. We really enjoy it! Hope you do too! :)

  5. Okay, I'm completely mesmerized by the VitaTops and I have not seen the banana fudge or chocolate pomegranate in this area. I am so jonesing for those flavors now.

  7. I am fascinated by the FRIED RICE. My mom is always making fried rice (really fried) and trying to send it home with me, which I decline but then am craving fried rice for days!   8. man, I just can't eat tofu...tried and it was an epic fail.
    I think it's the consistency.
    I have been known to spit out dry muffins.
    Those vita top things look spiffy though.

  10. OK...I've never tried tofu. I've always thought it would be gross. Is it not?

    The fried rice sounds delicious.

    I wanted you to know that you inspired me to cook a "real" meal last night. I made a low-fat chicken fajita pizza on a whole wheat crust-and my husband said it was good. Woo-hoo! Thanks for the motivation TJ!

  14. This really looks pretty good, but I just don't know if I can get my meat-eater (that is, my cattle-farmer) to go for tofu. Actually, he kinda freaks out when I keep non-meat patties in the freezer for lunch.

    Maybe I'll try this some girls' night in =]
