I don't know what came over me but I was making Sean a sandwich and I took one of the slices of bread, folded it in 1/2 and took a huge bite. This is bread that I do not eat. We seldom have food in the house that is not for me...well, because for one I will eat it (kinda like I just did) and because I control most of the food that is in the house. I do the shopping. After I gulped down the bite I took I turned around and THREW the piece of bread directly in the trash. I felt badly for swallowing that piece. The OLD fat girl had returned for a second. My eyes even teared up a bit because for me the control that I have over food these days is the only thing that is keeping me going strong. Food and I are BFF's, now more than ever, but I chose to eat differently now. Took the bread outta the garbage to show you my naughtiness and came over to the computer to confess my sins. :(

At least it was 8 grain bread. lol
On Saturday for breakfast we had Fiber One pancake mix. I love that I can eat pancakes and still be OP! This time I mixed in one really ripe banana and topped with a less ripe one. YUM!

For a mid-day snack I baked some of the thin won ton wrappers that I bought last weekend. I cut them in 1/2 sprayed them with PAM and sprinkled a lil salt on them. Stats on the THIN won ton wrappers- for 10: CAL 120/ FAT 1/ FIBER 7=2 WW points WOW! We had them with salsa-yum!


Dinner was a dish that we tried for the first time a couple of weeks ago and loved. It really is delicious and tastes WAY worse for ya. From the Clean Eating Magazine- Eggplant Rounds-

2 eggplants -sliced into 3/4 inch rounds
Mozzarella Cheese (I used red. fat- 1 ounce for 2 eggplant rounds)
Marinara Sauce
3 egg whites-lightly beaten
1/4 cup panko bread crumbs
1 teaspoon Italian seasonings
1/2 teaspoon garlic powder
pepper
Parmesan cheese to top with
Mix spices into panko, then dip each round into egg whites, then toss into panko/spice mixture-making sure eggplant gets covered.
Oven at 425. Spray cookie sheet with PAM. Bake coated eggplant for 30 min-or until eggplant is soft; turning over 1/2 way through.
Remove from oven when finished, set broiler on. Top eggplant rounds with sauce and cheese. Broil until cheese melts.
I also made a lentil salad that was delicious! Trader Joe's has these packs of lentils in the refrigerated section-they say that they are seasoned, and you can serve them hot or cold. All I did was rinse them under some cold water-add them to a bowl with green onions, sliced hearts of palm, diced beets (also from Trader Joe's) and some canola oil & vinegar dressing to give it a kick. Lentils pack a nice little fiber punch! They are a great addition to a salad. Take a peek:



I spent Sunday out with my Parents. My Mom and I went shopping at a few stores, even went over to a cool antique mall that we like to check out on occasion. While we were out of course we needed to grab lunch. It is hard for me to eat at a fast food place...mostly because I start craving all of the greasy crap. I think my thighs have dreams about chili cheese fries on occasion...lol Anyway, we decided on KFC. I wanted to give their grilled chicken a try. I ordered one breast (peeled off the skin-never ate that anyway) my side of choice was the corn cob and baked beans.

I threw away the biscuit that the guy put on my plate even though I said NO BISCUIT. lol The chicken was kinda blah. Dryish and not very flavorful. I was disappointed. My favortite place for chicken is El Pollo Loco. That is some tasty chicken!! YUM YUM YUM!
Sunday's dinner was chicken apple sausage with steamed string beans, and some veggies that I threw on the BBQ-zucchini, red bell peppers, and onions. I also got to eat one of the WW cookies and cream ice cream bars that I keep at my parents as dessert. Delicious! :)

I feel better about the bread incident now. lol I worked too hard to go back to my old bingeing days! Besides, I need to go Fall/Winter clothes shopping, and it is WAY more fun to shop now than it's ever been in my life! :) Whoo hoo!
