Mexican Baked Potato

YUM! I had to come back to post again tonight and share my dinner with you. Ya know when you are looking forward to something and you eat it and actually say YUM with each bite? Oh, ok well maybe that is just me. hehe :) Here ya go:

Mexican Baked Potato
Serves 1
10 WW points

1 medium potato
3 ounces cooked chicken breast
1/2 cup black beans
1/4 avocado
2 tablespoons light sour cream
2 tablespoons salsa
diced green onions

Cook potato (bake or microwave), cut into bite size pieces; add to bowl. Top with cooked chicken, heated black beans, green onion, and avocado. In a small bowl mix sour cream and salsa to make dressing; spoon mix over top of potato. ENJOY!

You can add any topping you like to this- make it vegetarian, make it with ground beef or turkey seasoned with taco seasoning. It really is up to you! :)

This looks so good! I love taco salad. I make one all the time but never tried it with potatoes. This will be one of my dinner options for next week, Thanks!

Oh and I'll let you know how I like it. I don't like sour cream though so I'll have to leave that out. :-)

I do a mexican baked potato, but I use cottage cheese and top with salsa. Yours looks much more luxurious! The cottage cheese is fantastic on the potato.

One of my favorite take-to-work lunches is a baked potato (good use for leftovers!) mixed with whatever I'm in the mood for that day -- cottage cheese and spinach with vinegar; onions, broccoli and cheese; boca burger and salsa. As you say, very filling and satisfying!

What an excellent idea....We just picked up a big bag of "spuds" (that's what we call potatoes in Ireland) on Thursday so think this will be finding its way onto the menu in the next week or so...well it will be on my menu because no doubt my other half won't want it...bla!!
