And On Monday She Shopped...

Whewww! I am pooped! Ok first, where did the weekend go? It flew by so fast! Hope everyone had a fun one! I spent Saturday with my Mom, then Sunday Sean and I went to a friend's birthday dinner. It was at Chevy's and I planned ahead. I saved a bunch of my weeklies, and looked at the menu and nutritional info before I went to dinner. I feel it was a success! :) I enjoyed what I ate as well! I had the bowl of chicken tortilla soup and a side garden salad with fat free salsa vinaigrette. Also enjoyed some chips and salsa with my margarita. Whoo hoo! See if you plan ahead how you can work the program!! Love it! :)

Today is my shopping day. I planned out meals yesterday and tried to also pick stuff for next week. I do not like shopping with a crowd so I tried to stock up on some things so I can skip the busy stores before Thanksgiving. Came home from shopping and I was excited to prepare lunch. Of course seeing all of the yummy Mexican food last night made me plan for a delicious lunch this week. I added some black beans to the food processor to make a fake refried bean mix. Added in just a tablespoon of salsa to get things blended up nicely. I cut up and sauteed some red bell peppers and an onion to top off my lunch- Check out these bad boys! YUM!
This was a delicious LOW POINT lunch! I used the Mission brand THIN corn tortillas (2 for 1pt) 1/2 cup of black beans (1) 1 tablespoon of light sour cream(1) Oh, and check out this enchilada sauce I picked up at Trader Joe's- (1/4 cup is 1 pt) I only used 2 tablespoons to drizzle a little flavor on top of the tostadas. YUM!
I have a container of bean mixture and peppers and onions in the fridge for this weeks lunches. I love when I can make things at home that I would pay to eat at a restaurant-and WAY healthier! :)

Ok time to lift some weights and do leg exercises. Yes, you heard me right. I also did some yoga poses and my physical therapy stretches while I watched my DVRed Desperate Housewives. :)

Dinner tonight is a BIG shrimp salad. I will take pictures later for you all. :) Hope everyone has a great day! BYE!

OOH! I almost forgot... We stopped by a used book store yesterday and I came across this book. Fit From Within by- Victoria Moran. As I flipped through it just some of the chapter titles caught my attention- seems interesting! :)

your lunch looks great...I make a 'mexican coleslaw' that I just love.
It is green cabbage shredded, green pepper (shredded), carrot shredded, and then you take a tsp of oil and saute it till it's tender crisp. I don't know, but I love this stuff.They serve it at three margeritas and I liked it so much i asked the waitress. I was surprised how simple it was...and low cal to boot. lol.
I like planning to have a special meal. I get the feeling of accomplishment for having planned well and I get to eat something nummy. victory.

Mission's site didn't have a store locator on it. I will look today when I'm out for the corn tortillas...hope I can find them!
