I received good news from my Doctor that I am a candidate to try an injection in my back to see if it helps my pain! Yippeee If that works, then I can get the nerve burned-which might make me pain free for a while! I will try anything they are willing to throw at me so I am thrilled! :) So that was my good news this week but the bad news is that I have to wait until November 2nd for the appointment. Oh well... :)
Ok so I am being really on top of counting my points this week. BTW does everyone know about the new WW application for the iPhone? LOVE IT! I think I'm just an electronics geek so any new tool to help me that I can add to my iPhone makes me happy. hehe :) Anyway this new app is WAY better than the old WW mobile! I love everything about it...especially that you can access your favorites and recipes from it. Perfect!
Food...let's talk food. I did not cook much this week. We did enjoy some Morning Star Grillers Vegan burgers-with a side of baked home fries:
I also made a Bulgar Chili that I saw on a fellow bloggers site. JUST SWEET ENOUGH Thanks SO much! P.S. I made a few changes to the recipe ( just opened my pantry and didn't want to go to the store!) so here is my version:
Bulgar Chili
1 teaspoon olive oil
1 cup chopped onion
3 carrots-peeled, cut into small pieces
2 large cloves of garlic; chopped
2 bell peppers; diced
2 1/2 teaspoons chili powder
1 1/2 teaspoon cumin
1 teaspoon salt
1 28 ounce can crushed tomatoes
28 ounces water
1 11 ounce can corn
1 15 ounce can fat free refried beans
1 15 ounce can kidney beans; rinsed,drained
1 cup canned pumpkin
1 cup uncooked bulgar
Heat oil in a large pot. Add onions, carrot, and garlic. Saute until onions are translucent; approx.. 10 minutes. Add bell pepper, saute from 5 more minutes. Stir in the chili powder, cumin, and salt. Add crushed tomatoes, water, kidney beans, pumpkin, refried beans, corn, and bulgar. Make sure refried beans are stirred into mix thoroughly. Bring to a boil and reduce heat to low. Cover and simmer for 25 minutes, stirring occasionally.
Added it all to the WW recipe builder- 8 generous 1 cup servings (1 plus a lil bit) =4 points
*you can make this HOT if you like- 1 medium seeded chopped jalapeno*
I also had to check the water level a few times- The bulgar absorbs a lot of the broth. This really was delicious! We loved it for dinner then I enjoyed it all over again for lunch today. YUM!
Tonight is an easy night for me. I have a couple of the Safeway brand Eating Right butternut squash raviolis in the freezer- might make those, not sure??!!

Oh my back...long story... 15 years of dental assisting made me crooked literally. lol I have scoliosis, degenerative changes (arthritis) and compressed disks. SIGH Im too young to feel as old as I do! lol My dear BF reminded me last night that Ive come a long way and I need to stop stressing about the little things. :) Im sure my back loves the 60 something pounds less that I carry! :)
I sure hope that they can get rid of that back pain...no fun!!
