FOOD!

I enjoyed a couple of meals that I wanted to share with you. Lunch the other day was a big salad- lettuce, red cabbage, apples, carrots, topped with cottage cheese, raisins, and roasted sunflower seeds. When I use to OD at the Sizzler salad bar -adding the combo of cottage cheese, raisins and sunflower seeds was my favorite! Oh but I also drenched the salad in blue cheese dressing too! So this salad was MUCH healthier! :)

Lunch today was a wrap that I folded up and then realized that you cant see what is in it :( sorrry! Roasted chicken, fresh spinach and a smear of light cream cheese with green onions mixed in. To go with my wrap I had a bowl of veggies.

Dinner tonight was good! I put a portobello mushroom on the George Forman- cooked it until it was tender. In a pan I put sliced bell peppers and onions with a little PAM- cooked until soft. Then I put it all on a Orowheat/Arnolds Sandwich thin with a slice of reduced fat swiss cheese! YUM! The mushroom was bigger than the bun! haha!

I had a couple of small sweet potatoes that were in need of cooking so I threw them in the oven earlier and just mashed one up with a little Molly McButter as a side dish.


For the finale-DESSERT! I made this yesterday actually and brought it over to Sean's parents house. I was nervous bringing something that I had never made before but I liked it. I took it out of a Sunset magazine in the waiting room at the doctors office. hehe :) Oh and it's made by a local guy- Peter Zensius of San Franciso. They had readers send in recipes, Thanks Peter!

Apple Oven Cake
Serves 6
3 Tablespoons butter
1/4 cup packed light brown sugar
1/8 teaspoon cinnamon
1 sweet apple, such as fuji-peeled and sliced
3 large eggs
1/4 tsp. salt
1/2 cup each flour and milk
1 Tablespoon each fresh lemon juice and powdered sugar

Preheat oven to 425 degrees. Melt butter in a 12-inch ovenproof frying pan over high heat. Add brown sugar and cinnamon, swirling to combine. Add apple and cook until just starting to soften, about 3 minutes.

Meanwhile, in a blender, whirl together eggs, salt, flour, adn milk. Pour egg mixture into pan and bake until puffed adn brown, about 15 minutes. Sprinkle with lemon juice and powdered sugar.

Per Serving- 189 CAL, 9 FAT, 0.7 fiber=4

  4. I'm going to make me a mushroom burger soon. I have all the stuff now. That salad looks so yummy!! It's great that you show everyone salad is not always about lettuce.
