I am such a loser

Down 1.8 this week! YES! I’m super happy with that and I owe it all to the planning and tracking that I do. Not much activity this past week ( or the past 3 with being sick) but I plan on kicking that up a notch as well. When I got home from the Weight Watchers meeting I got busy cooking and planning. In the WW cookbook Best Eats they have a cake recipe that sounded tasty. I like to make sure when I do make a treat like this that I can get it out of the house quickly. Lol I will pack up some for Sean to take with him to work and I am going to bring some to my parents. I will be safe! ☺

Mock Macaroon Cake

1 16 ounce box angel food cake mix
1 20 ounce can unsweetened crushed pineapple, undrained.
½ cup sweetened flaked coconut
½ teaspoon ground ginger

1. Pre Heat oven to 350 degrees
2. Combine all the ingredients in a large bowl; stir until blended. Pour into an ungreased 9x13 inch-baking dish. Bake until a toothpick inserted into the center comes out clean, about 45 minutes. Let cool completely in the dish on a rack.

Per Serving (1/20 of cake) CAL 113/FAT 1/FIBER2=2 points

**cake comes out GOOD but VERY sticky. They recommend cutting it with a serrated knife and wiping it off with a wet towel each time you use it.**



For dinner tonight I wanted to make a meal that I had out at a restaurant recently. First I had to remember everything that was included in this dish. Easier said than done…I may have left out something. To help me figure out the points I added all of the ingredients to the Weight Watchers recipe builder …I love that tool!



Artichoke Caper Olive Spaghetti ( I made that name up Haha!)

4 cloves of garlic, minced
8 oz uncooked whole-wheat spaghetti
7 tbsp capers
1 red bell pepper, diced
4 ounce can sliced black olives
1 1/2 cup(s) canned artichoke hearts, without oil, sliced in half
3 tsp olive oil
1 cup red onion, diced

Cook pasta according to directions. In large sauté pan add oil, onions, and garlic; cook until onions are soft. Add artichoke hearts, olives and capers. Stir in pasta to the vegetables, coating spaghetti with the olive oil. Top with Parmesan cheese. (Additional points)

Serves 4
6 points per serving

  11. Congrats on your loss. Way to stay on track. I see that you have a lot of veggie dishes as main courses. That is a great way to stay healthy.
